Val "bullying" her lil sister into cutting that bird's nest of a mane. Athena takes after her biological father and grows very thick fur. Her mane and tail also grow incredibly fast and she has to get a cut weekly for it to be manageable.
Athena... taking that advice? She has to get her hair completely buzz cut when she enrolls in the military. It stays like that for about a year until she's officially given a knighting position at the Crystal Empire. She "shadows" Flash Sentry until she's given her own region to patrol, which is just a few blocks away from the castle.
unicorns are all very snobby, especially if raised in unicorn households (where at least one parent is a unicorn). they're very prideful. a lil fun fact: white coats are extremely dominant and will almost always carry over in foals. Rarity's dad's white-ish coat carried into both Rare and Sweetie Belle. Even though Donut Joe has a cream colored coat, Rarity's white coat was dominant in all her children except Caramel (Athena's and Val's lil bro), who has Donut's fur color but a little lighter. it's a weird trait in which it works both dominantly and recessively, depending on the bloodline
Somewhere in Velvet Sparkle's lineage was a white-coated pony, and although she didn't inherit it, she passed it down to her son, Shining Armor. white coats are much more typically seen in unicorns and considered noble or royal in association with Queen Celestia.
